St Patrick's Day treats including an easy version of the grasshopper cocktail, a kids' mint chocolate milk, and an Andes mint chocolate... in brownie form! St Patty's Day fun for the whole family!
1. Homemade Andes Mint Brownies
When you crave an Andes mint on a larger scale... make these "brownies".
They have three layers just like the mints, and they're pretty easy to make considering they are 100% homemade (grandma's recipe!). And since they are honestly more like fudge than a brownie, a small pan can feed a crowd.
what you'll need:
for the base brownies:
1 stick butter
2 squares unsweetened chocolate
1 cup sugar
2 eggs
1/2 teaspoon vanilla
1/4 teaspoon salt
1/4 cup flour
for the mint layer:
2 tablespoons butter (soft)
1 tablespoon creme de menthe
1 cup powdered sugar
for the top chocolate layer:
1/2 cup chocolate chips
2 tablespoons butter
instructions:
Preheat the oven to 325.
Melt chocolate squares with a stick of butter in the microwave (20 seconds to start and then 10 second intervals - stirring between each heating).
Stir in sugar, eggs, vanilla, salt, and flour.
Bake in 8x8 or 9x9 pan for 22 minutes.
Allow to cool completely.
In a new bowl, mix the soft butter with the creme de menthe and powdered sugar.
Once the brownies are cool, spread the mint mix carefully over the brownies and put the whole thing in the fridge.
In another new bowl, melt chocolate chips and butter (in intervals again).
Once the mint brownies are cool, take them out and spread the chocolate carefully over the mint. Don't worry if it's perfect - it's kind of cool to see the layers in the corners!
Put it back in the fridge one more time to let the chocolate harden.
It's ready to eat! And to store, it's best to keep it covered in the fridge. :)
2. Mint Chocolate Milk (for the kids!)
A twist on chocolate milk that can be served either cold or warm!
what you’ll need:
whole milk
chocolate sauce (we like this one)
whipped cream
andes mints
instructions:
Pour milk into your glass of choice about 2/3 of the way full.
Add one tablespoon of the mint syrup and mix it well.
Top generously with whipped cream.
Drizzle with chocolate sauce.
Use a knife to chop an andes mint and sprinkle it on top!
3. Easy Grasshopper Cocktail
An easier version of the grasshopper with a taste just like mint chocolate chip ice cream!
what you’ll need:
whole milk
bailey's chocolate liqueur (or another creme de cacao)
creme de menthe
whipped cream
andes mints (grated)
instructions:
Add 1 part milk, 1 part chocolate liqueur, 1 part creme de menthe.
Stir or shake well.
Add whipped cream
Sprinkle grated andes mints
