We're making a series of three sugar cookies for Valentine's this year, and we'll update the blog post as we go. We're making love letter cookies, ombre heart sandwiches, and some (not too) basic hearts with icing! We love to bake during this season, and we've got you covered with moderately basic to fancy - and all delicious!
1. love letter cookies with edible stamps
First up, the "love letter" cookies! We saw these edible stamps on social media and were ordering them before we could even finish watching the advertisement.
You'll need all the ingredients (for both cookies and frosting - separate recipes) listed below plus these edible stamps from make bake. Sprinkles are manvscake and edible glitter is Sweets Indeed.
what you'll need (cookies):
- 2 1/4 cup of all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 3/4 cup of room-temp, unsalted butter
- 3/4 cup granulated sugar
- 1 egg
- 2 tsps vanilla extract
what you'll need (icing):
- 2 cups powdered sugar
- 3 tbs warm water
- 1 tsp vanilla extract
- food coloring (added later)
instructions:
❤️ Stir your dry ingredients together.
❤️ Mix the butter, sugar and vanilla together. (If you have a mixer, it makes this step easier).
❤️ Combine the wet and dry ingredients.
❤️ Separate dough in half and roll each half on 2 different pieces of floured parchment paper.
❤️ Refrigerate for 1-2 hours. (We only chilled ours for 1 hour, it was perfect).
❤️ Cut out several copies of three shapes - rectangles, triangles (that fit on top of the rectangle), and mini hearts.
❤️ Bake the cookies for 11-14 min on 350F.
❤️ While the cookies are baking, let's get the icing ready! Mix, mix, mix all those icing ingredients (except the food coloring).
❤️ Divide the icing into bowls (based on how many colors you want). Add the food coloring (one drop at a time) to make your perfect color combo.
❤️ Put the icing into piping bags (or just Ziplock bags like we did).
❤️ Apply with toothpicks - or a fancier tool if you have it. :) Note: This icing will harden after ~20 mins... so if you're still decorating, just give the icing a stir before applying, and it will look the same as when you started.

2. ombre heart sandwich cookies
These are... my favorite Valentine's day cookies of all time. Ever. BUT... with that said, they are not low effort. In fact, the first time I made these, I was in my mid-twenties and so excited to bring these to my 'galentines' night with my friends... but I will never forget that I was up until 2am working on them. Again, very much worth it if you want something delicious and beautiful. But plan ahead.

And you might be so impressed with their beauty that you wrap them up as little gifts for friends like I did one year.
3. (not so) basic heart sugar cookies
Alright lastly. So I made you a promise that I'd share an 'easy' cookie (I mean it is a homemade sugar cookie - so let's not maybe throw around that word 'easy' too much here) that actually does not look basic. And... after much trial and error, I'm confident that I delivered.
instructions:
❤️Make cookie recipe outlined in #1 but use heart-shaped cookie cutters. (Note: These are similar to the cookie cutters we have from forever ago - as they are all the same heart shape and style but come variety of sizes.)
❤️Decorate half of each cookie at a time....go wild. In this case we used pre-made frosting out of the can, sprinkles from Target, and edible glitter from Sweets Indeed.
